I’ve been wanting to share one of my new favorite noshes with you… a Baked Avocado Egg Bowl Recipe! Perfect for breakfast or even lunch! This recipe is easy, healthy AND tasty!
- 2 eggs
- cayenne (optional)
Preheat your oven to 425 degrees F. Cut your avocado in half and remove the seed. Scoop out some of the avocado to allow enough room for the egg.
Crack one egg in to each of the avocado bowls and place in over for 15-20min.
Once baked squeeze some fresh lemon over the avocado and then sprinkle parsley, cumin and salt/pepper. I like a bit of spiciness so I sprinkle some cayenne as well.
