I had been craving ceviche for a couple weeks so finally I grabbed all the stuff that I needed at the store and headed home to the kitchen. I really love ceviche with the citrus limes, fresh cilantro, creamy avocados and the hint of spice from the jalapenos. I prefer a really simple and healthy ceviche with no mayo. Hope you enjoy it too!

Ingredients:

  • 2 lbs Tilapia fillets, finely diced
  • 8 limes
  • 8 lemons
  • 1/2 cup chopped seeded tomato
  • 1/3 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 chopped avocado
  • 1 jalapeno
  • Salt and Pepper to taste
  • Chips or crackers

Directions:

Place the Tilapia in a bowl and juice all of the limes and lemons over the fish. Cover with plastic wrap and chill in the refrigerator until the fish is white throughout, about 15 to 20 minutes.

While the fish is in the refrigerator chop your onions, tomatoes, jalapenos and cilantro.

Look at the bright, vibrant red!

I like my ceviche to have some spice so I leave the seeds in and add a couple extra jalapenos.

Now take out the fish that is thoroughly “cooked” and add all your chopped items to it and stir. Then chop up your avocado and add as well.

I served my ceviche with seasoned corn chips but it’s also good on crackers.

    This was delicious! Perfect for a weeknight meal!! I added swordfish in addition to the tilapia.

      I’m so glad you liked it! Adding Swordfish sounds amazing! I, personally, wouldn’t keep it longer than 48 hours. Anything longer than that makes me nervous.
